Can someone tell me which Beocenter/Beomaster models have the clock/timer function which will remain stored when the device is unplugged?

I know this is a feature of the later Beomaster 6500/7000 rather than the 5000/5500.

I have a Beocenter 7000 and a Beomaster 6000, I presume that each time I turn off the unit I need to reset the clock, is this correct?

Correct.
Same goes for the other Beocenters in the 7xxx range and Beocord 6xxx, 8xxx, 9xxx.
