Members, today I picked up a preowned beosound 3000 & beolab 2500 speakers. I'd like to know if there's a way to do a wipe/reset of all the settings from the previous owner?

TestMode 31 will clear all radio/cd/timer/sound settings

To enter testmode, within 30 seconds after connecting power to the unit, press SOUND 0 2 5 8 on the keyboard with no more than 2 seconds between each press.
Then just press 31, and the display will show DEFAULT TM ERROR, then just press standby, and all should be cleared.

No, took the instructions from the bs3000 service manual .. What error did you get ? If all is well, the display will show DEFAULT TM ERROR, if something went wrong, it will say TM ERROR.

There shouldn't be a need to reset it - just delete the station presets, enter your own, and adjust the bass/treble/balance/turn-on volume level. The user manual is onsite for silver and gold members if you need it.

Resetting is not the problem, the problem is that we both have a TM ERROR, what I've read is that the eeprom is bad and/or the processor, nothing to reset anymore, its a goner or it will be a costly repair....

Just ignore this error, if your 3000 is working, you can store/delete channels/set timers/tune stations and play a CD, then why care about this ?
The processor is NOT faulty, I have seen a lot of these 3000's they almost never give correct feedback for the RESET Testmode.

I don't want to nag but the problem is that the only thing working is the doors and the clamper, so its a nice presse papier at this moment...

Pretty important information :) In your case... the processor pcb is probably dead... Nothing else to do than find a donor.
And as a bonus information, if you can find the processor PCB from a BV7-32, then this module works with a BS3000 ;) Just need to make sure that the pinched in he new processor module is disabled, and then switch the BS3000 sw to the BV7 module, I have done this with success :)
And bonus bonus, your BS3000 with BV7 processor will tune like it has never tuned before, and it is much faster in general than the original processor.

Well, you could begin to measure voltages and so on, and you could also verify with a scope if there are dead capacitors that introduce noise in the circuit, but I have not bothered with it. If it is the processor itself that is dead, nothing can be done, if you find dead caps, resistors, transistors, they can be replaced.
It should be possible to determine what is wrong, but the easiest way would be to compare a defect and a working board, and then do some measuring to see what's the difference.
It is easier to find a replacement unit, but as you mention, it also might have a limited lifespan.
