Rather new to the world of B&0, and like the question says, I would like to connect my recently found Beocords (I found both the 1900 & 8000) to my traditional Rotel receiver. I think I've figured out that I need a Male DIN to RCA cable, but should it be a 7 or 5 pin?

If so, is this the best buy or should I be looking somewhere else?

That cable will be fine. You do not need the 7 pin DIN, because the extra 2 pins just carry data which will not be needed in this application.
The audio L&R are carried on pins 3&5 respectively, both in Powerlink and Audiolink leads.
You would need a different cable if you wanted to be able to record on the Beocords also, but I doubt this is necessary.

but I would try to find a better quality one - Sounds Heavenly may do them.
