Boats go all-week during the day. Go to Central Station and catch a boat in front of the station. There is also a hop-on-hop-off version, you could walk back over the canals. (Tad cold now)

I normally would've said yes but as I am in the middle of remodelling my new place I can't unfortunately. I would suggest to get a map and just wonder with in the canal rings south of central station, there is tons to see and a canal tour is a terrific way to do it somewhat quickly.
The redlight district is almost more of a tourist destination now though, it's probably not what you think when you imagine it. Also a real pretty area is near the Rijksmuseum, you don't have to go in as it's huuuuge but there is a nice square in front, pretty buildings and a B&O shop close by :p
just an fyi, if you find yourself in Utrecht for some reason, I could make some time between all the reno stuff.
Maybe the “coffee houses” are where B&Os software developers hold their offsite design reviews...
