In French, there's a different name for the bay scallops (pétoncle = pecten) and for the great or king or sea scallops(coquille Saint-Jacques = pecten maximus). The last one being the one related to the Camino de Santiago - way to St James in Spain.
French people swears only by coquille Saint-Jacques (preferably from Saint-Brieuc, North Britanny) !
Nowadays, we find only the white part of the scallops (called "noix de Saint-Jacques"), and not anymore the complete edible part (noix + corail), except if you ask your fishmonger to keep them (fashion?)

Saint Beogrowler:Cultural question, what is the connection between things that are French and frogs? I’ve seen this multiple times. Maybe it is obvious to the rest of the world but the only answer I’ve ever found is that French people eat frogs but so do lots of people in the southern USA.

Yes, and yes. The brewer recommends aging in the bottle. The smoke flavor changes considerably over the years, as does the beer as a whole.
